Sugar-Free Banana Muffins



It's okay to eat these sugar-free banana muffins as a treat; they're great for a quick breakfast or snack. Because they are made with ripe bananas, they are naturally sweet, and they are soft and moist.

Ingredients:

  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • A pinch of salt
  • 1/4 cup chopped walnuts optional
  • 1/4 cup sugar-free chocolate chips optional

Instructions:

Preheat your air fryer to 325F 160C for 5 minutes

In a mixing bowl, combine the mashed bananas, eggs, and applesauce

Mix until well combined

Add almond flour, coconut flour, baking soda, baking powder, vanilla extract, cinnamon, and a pinch of salt to the banana mixture

Stir until you have a smooth batter

If desired, fold in chopped walnuts and sugar-free chocolate chips

Grease your muffin tin or use silicone muffin liners

Spoon the muffin batter into the muffin cups, filling each about 3/4 full

Place the muffin tin into the preheated air fryer basket

Cook at 325F 160C for 12-15 minutes or until a toothpick inserted into a muffin comes out clean

Remove the muffins from the air fryer and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely
