Ingredients:
- 1 1/2 cups of crushed Thin Mint cookies
- 1/2 cup of unsalted butter, softened
- 1/2 cup of granulated sugar
- 1/4 cup of brown sugar
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of salt
- 1 cup of semisweet chocolate chips
- 1 tablespoon of vegetable oil
- Additional crushed Thin Mint cookies for coating
Instructions:
In a mixing bowl, combine the softened butter, granulated sugar, brown sugar, vanilla extract, and salt
Mix until well combined
Add the crushed Thin Mint cookies to the mixture and stir until it forms a cookie dough-like consistency
Roll the cookie dough mixture into small truffle-sized balls and place them on a parchment paper-lined baking sheet
Place the baking sheet in the freezer for about 30 minutes to firm up the truffles
While the truffles are chilling, melt the semisweet chocolate chips and vegetable oil in a microwave-safe bowl in 30-second intervals, stirring until smooth
Remove the truffles from the freezer and dip each one into the melted chocolate, coating them evenly
Use a fork to lift them out of the chocolate, allowing any excess to drip off
Place the chocolate-coated truffles back on the parchment paper and sprinkle with additional crushed Thin Mint cookies while the chocolate is still wet
Return the truffles to the freezer for another 15-20 minutes to set the chocolate coating
Once the chocolate is set, your Thin Mint Cookie Dough Truffles are ready to enjoy!
